Mixed Berry Cheesecake

An easy recipe for a delicious mixed berry cheesecake, by Chef Dimitris Michailidis!

Ingredients

• 220 g Biscuits
• 110 g melted butter
• 400 g cream cheese
• 3 tsp lemon juice
• 470 ml heavy cream
• 90 g sugar
• 1 packet vanilla
• Mixed berry jam

Chef’s Notes

Spread the cheesecake with your preferred jam.

Instructions

  1. In a bowl, combine the crushed biscuits and melted butter, and mix with a spoon.
  2. Pour the biscuit mixture into a 22 cm cake ring, and spread and press the mixture evenly with a spoon.
  3. Whip the cream cheese with a hand mixer, add the lemon juice, and continue mixing with the mixer.
  4. Add the heavy cream and beat well with the mixer.
  5. Add the sugar, beat with the mixer, then add the vanilla and continue mixing.
  6. Spread the cream evenly in the pan with a spatula, smooth it with a spoon, and refrigerate the cheesecake overnight.
  7. Cut into pieces, top with mixed berry jam, and serve.
