Fig Ice Cream

Ingredients

• 450 ml heavy cream
• 400 g • Sweetened condensed milk – 400 g
• 2 jars of spoon sweet figs

Chef’s Notes

Do not whip it like whipped cream, as it will not have a nice texture once frozen.

Instructions

  1. Pass the spoon sweet through a strainer to separate the figs from the syrup, and cut the figs into small pieces.
  2. Place the cold heavy cream in a bowl and whisk with a hand mixer until it reaches a yogurt-like consistency.
  3. Add the sweetened condensed milk and mix with the hand mixer for 1 minute.
  4. Add the figs to the cream, transfer the mixture to a rectangular container with a lid, freeze it overnight, and serve.
