An easy, simple recipe for everyone’s favorite chocolate truffles, by Chef Dimitris Michailidis!
Truffles
• 600 g praline • 6 chocolate wafers • 200 g ground roasted hazelnuts
Coating
• 250 g melted milk couverture chocolate • 160 g ground roasted hazelnuts
Instructions
Place the praline, crushed chocolate wafers, and ground roasted hazelnuts in a bowl. Mix by hand (always wearing gloves) and put the mixture in the freezer for 30 minutes.
Shape the mixture into small balls and return them to the freezer for another 30 minutes.
Prepare one bowl with melted couverture chocolate and another with ground hazelnuts.
Coat the truffles with the melted chocolate and roll them in the ground hazelnuts.
Place them on parchment paper to drain until the chocolate sets, then serve.
Chef’s Notes
Use any type of praline you prefer. It’s best to use chilled praline from the refrigerator.
